Tex-Mex Chicken Fajitas Made Easy in the Vulcan PreciPan™

The PreciPan™ Tex-Mex Chicken Fajita recipe below, curated by one of our Vulcan Chefs, can be served on tortillas or over rice and is perfect for a themed Tex-Mex lunch day. Try this recipe for Tex-Mex Chicken Fajitas cooked in the Vulcan PreciPan™

Yield: 12,764 grams – approx. 56 servings

Ingredients:

20 pounds boneless, skinless chicken breast or thighs
1 cup olive oil 
12 tablespoons lime juice 
12 cloves garlic, minced
4 teaspoon ground cumin
4 teaspoon smoked paprika
4 teaspoon chili powder
4 teaspoon ground coriander
4 teaspoon salt
2 teaspoon black pepper
8 large onions, sliced
16 bell peppers, sliced
Cilantro, chopped, for garnish

Directions:

Preparation:

  1. In a large mixing bowl, combine olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, ground coriander, salt, and black pepper.
  2. Add the chicken pieces to the marinade and toss to make sure it is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

Cook:

  1. Place PreciPan™ on Pan mode and click multi.
  2. Preheat one zone to 375 degrees and the other zone to 325 degrees.
  3. Add neutral oil to the entire cooking surface.
  4. On the zone set to 375 degrees, add chicken make sure not to overcrowd. Cook for about 5-7 minutes or until the internal temperature reaches 165 degrees.
  5. On the zone set to 325 degrees, add peppers and onions. Cook until tender and slightly charred. About 8-10 minutes.
  6. Once everything is cooked, you can either combine or serve separately. Garnish with cilantro.

Test Kitchen Tips:

  • Work in batches to get optimal browning. Make sure not to overcrowd the cooking surface.
  • For more flavor, marinate the chicken overnight.
